Hakuna Frittata #vegetarian #food

A frittata is kind of like an omelet and kind of like a quiche. Except, you know, not. I got to hankerin’ for one last night and had the makings for one here at Mom’s, so BOOM.

Spinach Frittata

  • spinach
  • egg
  • cream or milk
  • cheese
  • butter
  • onion (if you got ’em)
  • seasonings you like (I like — yes, you know me so well — Jane’s Crazy Mixed-Up Salt)

I didn’t have any onion, alas! If you do, melt some butter in a round-sided (omelet) pan and cook the onions slowly until they’re soft. Add the spinach, either fresh or canned that you’ve drained and squished most of the liquid out. Beat the egg and cream and stir in the cheese. Pour the egg and cream over the spinach and cook ON LOW until the top is dry and the cheese is melted.

Slide it out onto a plate, maybe sprinkle it with grated nutmeg, and enjoy a feast.

      Good name! ~grin~ Yeah, I highly recommend that frittata. We don’t keep cream at our house, but I had some at Mom’s to boost her calorie count, when she was taking pureed regular food through the tube. During the month she was at rehab, they never gave her bolus feedings, and her tummy shrank and now all she can take is tube infusions. But we’re working on it. ANYWAY, there’s some cream here, and I highly recommend it in place of milk for some cooking, including this frittata.

    Just a comment on what you said above:

    While that may be the case the recipe here is basically an animal based recipe. The only veggies you have is spinach and onion.

    Egg, butter, cheese and cream are all animal products.

      I know. That’s why I label it vegetarian, not vegan. The cheese and cream are definitely naughty, but they’re what I had in my mother’s fridge. The “butter” is vegan margarine, and the eggs come from our #2 daughter’s pampered poultry, so I don’t feel bad about them at all. I’m about to hop over to your site to see your un-tuna recipe — I’ve been longing for a good one! Thank you so much for commenting and leaving a link!
